Standard Operating Procedures (SOPs) are guidelines that explain step-by-step instructions for specific tasks and processes.

They ensure consistency and standardisation in operations. In the case of food safety breaches, SOPs are crucial in preventing future incidents and ensuring the safe handling of food.





Here's how SOPs can be helpful:

  • Personal hygiene: SOPs provide detailed instructions on proper personal hygiene for food handlers, such as hand washing techniques, using protective gear like gloves and hairnets, and rules against working while ill. Clear guidelines and regular training on personal hygiene minimise the risk of introducing contaminants during food production.

  • Cleaning and sanitation: SOPs define specific procedures for cleaning and sanitising equipment, utensils, and surfaces that come into contact with food. This includes using appropriate cleaning agents, determining cleaning frequency, and following proper sanitation methods. SOPs also cover the correct disposal of waste to prevent cross-contamination and maintain a hygienic environment.

  • Storage and handling of raw materials: SOPs provide instructions on the appropriate storage and handling of raw materials, encompassing aspects such as temperature control, segregation of raw and cooked foods, and appropriate labelling. These guidelines prevent the risk of cross-contamination and guarantee the safe receipt, storage, and utilization of raw materials.

  • Process controls: SOPs identify critical control points and procedures to ensure food safety during processing. This may involve monitoring temperature, time, and other factors that can affect the growth of microorganisms. SOPs also provide regular equipment maintenance and calibration instructions to ensure accuracy and reliability.

  • Allergen control: If the facility handles allergenic ingredients, SOPs address procedures to prevent cross-contact between allergens and non-allergenic ingredients. This includes proper cleaning and segregation practices, labelling requirements, and allergen awareness training for all staff members.

  • Record-keeping and documentation: SOPs include instructions for maintaining accurate records of critical control points, monitoring activities, and corrective actions taken. These records serve as evidence of compliance and are valuable for audits, inspections, and continuous improvement.

  • Staff training and communication: Staff training and effective communication are essential in ensuring SOP compliance. SOPs should be readily available to all staff members, and regular training sessions should be conducted to ensure comprehension and adherence. Establishing communication channels allows for addressing any questions or concerns related to the SOPs, as well as providing updates or making necessary revisions when needed.
